  1. Place a large saucepan over medium-high heat and add the olive oil and butter. Once hot, add the onion and garlic and cook for 5 minutes, stirring constantly. Add the riced cauliflower and continue to cook for a further 2-3 minutes, stirring well.
  2. Add the diced tomatoes, cream, chicken stock, Sola sweetener, vinegar, spices, and seasoning, and bring the mixture to a boil. Reduce the heat to a rolling simmer and continue to cook for 20 minutes.
